I’m a sucker for English toffee. I mean, I LOVE it but it’s always hard for me to find just the right taste. I thought I found the perfect one a few years ago but then they changed their formula and I wept. Okay, I didn’t weep but I was bummed. That didn’t stop me from taste testing trying to find my new favorite. I may have found it…at least in cookie form.
I must tell you, these are soooo addicting. The shortbread-like crust along with the buttery toffee bits and rich chocolate topped with chopped pecans (or nuts of your choice) are heavenly. I cut them small so they were more like true toffee pieces but I probably should’ve cut them bigger because you tend to just grabbing an extra one when they’re as small as I cut them. These kept covered in a sealed container for 3 weeks in the fridge. I finally had to send the rest to work as a tear streamed down my cheek. These will definitely be a regular Christmas cookie for us! The video shows you how to bring it all together and what the recipe should look like in different stages.

English Toffee Cookies
Total time includes rest and chill time.
Ingredients
- 1 cup butter, softened
- 1 cup dark brown sugar
- 1 egg yolk
- 1 cup all purpose flour
- 6 oz semi sweeet chocolate chips
- 2-3 oz chopped nuts of your preference (I used pecans)
- 4 oz toffee bits
- 1/4 tsp salt flakes (optional)
Instructions
- Preheat oven to 350 degrees.
- Cream butter and brown sugar then add egg yolk and mix until combined.
- Gradually add 1 cup of flour and stir to incorporate.
- Butter a 13x9 dish and spread dough evenly.
- Bake for 35-40 minutes or until the middle is solid.
- Sprinkle chocolate chips over the cookie as soon as it comes out of the oven so it melts then spread end to end.
- Sprinkle toffee bits, nuts and salt if you're using it on top and allow to rest for an hour. Cut into desired sized squares then put in the fridge for an hour to harden the chocolate.

English Toffee is one of my favorite desserts on Earth. Anything from Heath Bar Blizzard’s to Sweetened Saltines to this cookie…..all my favorites and nothing says Christmas cookie, to me at least, like English Toffee.

Well that stinks, especially at 350 degrees! 🙁 I’ve made these dozens of times at the times listed with no issues so maybe experiment with your oven if it runs hot and needs calibrated (especially before baking season really ramps up.)
