Many will remember the magic of opening their lunchboxes as kids and discovering a fluffernutter sandwich. For the uninitiated, a fluffernutter is a peanut butter and marshmallow fluff sandwich. This unique, delicious taste has been captured in a cookie and it’s a super easy recipe to put together with only three ingredients!

Ingredients
- 1 cup (258g) creamy peanut butter
- 1 egg, large
- 1 cup (227g) marshmallow cream
Tools needed:
- Mixing bowl(s)
- Large spoon or silicone spatula
- Cookie sheet(s)
- Parchment paper/silicone baking sheet
- Small cookie scoop or regular spoon (flatware)
- Wire cooling rack
Instructions
- Preheat oven to 350 degrees.
- In a large bowl, mix together peanut butter and egg.
- Beat in marshmallow cream until almost fully combined or fold in marshmallow cream if you prefer there to be more streaks of mallow throughout.
- Scoop dough onto lined cookie sheet 2” apart.
- Bake for 12-15 minutes but do not overbake.
- Let cool for 5 minutes on sheet before transferring to a wire rack to cool completely.
