Banana bread is one of those comfort foods that instantly takes us back to a simpler time. The moist, delicious texture, the way the house smells when it’s baking, it couldn’t get much better…until now.
That’s right, there’s a way to make banana bread even more mouth watering…brown butter! Brown butter makes nearly everything better but in this bread, it makes it downright heavenly. Click the video for my easy to follow recipe!

Ingredients
- 1/2 cup (114g) butter, browned and cooled for 20 minutes (see video on how to make brown butter)
- 3/4 cup (165g) brown sugar (light or dark based on preference)
- 1 tsp vanilla extract
- 2 cups (250g) all purpose flour
- 1 tsp baking powder
- 1/4 tsp baking soda
- 2 large eggs
- 3-5 ripe, spotted bananas (3 if they are large, 5 if on the smaller side)
- 1 tbsp cinnamon
Tools needed:
- Mixing bowl(s)
- Large spoon or silicone spatula
- Loaf Pan (9x5 is typically standard size)
Instructions
- Brown butter, cool for 20 minutes.
- Preheat the oven to 350
- In a bowl, add or sift together flour, baking powder, baking soda and cinnamon. Set aside.
- In a large bowl, combine butter, brown sugar and vanilla until creamy.
- Add eggs and bananas until just combined.
- Add flour to wet ingredients until combined without over mixing.
- Bake for 60-70 minutes in a regular sized loaf pan until center comes out toothpick clean.
- Bake for 45-50 minutes if you are using 2-3 small loaf pans until center comes out toothpick clean.
