This recipe from Grandma’s cookbook is one that jumped out to me as I was thumbing through it because of all of the wonderful spices. I felt like it was the perfect recipe to transition us into Fall baking season and after taking a bite…or 7…I concluded I was right. When the apples aren’t ready at the orchard just yet, this applesauce cake is a easy, tasty way to get that first hit of Fall!

Ingredients
For Cake
- 1 3/4 cup sifted cake flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 1/2 tsp cinnamon
- 1 tsp apple pie or pumpkin pie spice
- 1 tsp nutmeg
- 1/4 tsp cloves
- 1/2 cup shortening
- 1 cup sugar
- 1 egg, beaten
- 1 cup unsweetened applesauce
For frosting
- 1/2 cup salted butter
- 3/4 cup light brown sugar
- 3 tbsp milk
- 1/2 tsp vanilla extract
- 2 cups powdered sugar
Tools needed:
- Mixer and bowl or stand mixer
- 8x8 pan
- Cooling rack
- Spatula
- Knife or off set spatula
Instructions
For cake:
- Sift flour, soda, salt and spices together and set aside.
- Cream shortening with sugar until fluffy.
- Add egg and beat thoroughly.
- Add flour mixture and applesauce gradually.
- Pour into greased 8x8 pan and bake at 350 degrees for 40-47 minutes.
- Cool completely on wire rack. While cake is cooling, it's time to make the frosting.
For frosting:
- In a saucepan over medium heat, add butter, brown sugar and milk.
- Bring to a low boil stirring constantly until sugar is dissolved.
- Remove from heat and cool.
- Add to mixer/bowl with confectioners sugar and beat until fluffy.
- Spread onto cake. Cut into 16 pieces.
