When pumpkin season rolls around, this recipe is consistently the first thing I make. Pumpkin Butter is like a taste of fall in every bite from the pumpkin itself to the brown sugar, cider and spices that give you the warm fuzzies. One of my absolute favorites is a peanut and pumpkin butter sandwich for lunch. The first one of the season is like heaven which means my jar won’t last long!
This goes perfectly with my Pumpkin Ginger “Beer” Bread I showed you earlier this week. The BEST gift you can give to yourself or others is to make them both together!

- 1/2 cup brown sugar
- 1 tbsp lemon juice
Instructions
- In a saucepan over medium low heat, add pumpkin puree, apple cider, vanilla extract, pumpkin spice, cinnamon (optional), ginger and lemon juice.
- Give it all a little stir to combine.

- Cover with a lid and turn the heat down to low.
- Cook for 35-45 minutes giving an occasional stir and taste test to see if more cider or spice needs to get it to the proper consistency.
