Your root vegetables that is. Wait! Where are you going?! I promise you’ll love this!
While turnips and carrots are available year round, parsnips (the white carrot for the uninitiated) aren’t in season in the summer. Something about roasting this combo in the Fall is so delicious and the perfect side dish to allow people to try something new to them. When I was trying to expand my culinary horizons, I made myself get two new to us foods every grocery trip and turnips and parsnips were one of them. This was the dish I made and it’s one we love to throw in there for variety. Roasting brings out a deliciously sweet side that would be the perfect accompaniment to a holiday dinner. Let’s help others get back to their roots too!
Roasted Root Vegetables
Ingredients
- 1 large turnip
- 2 large parsnips
- 4 large carrots
- 1 tsp olive oil
- 1/2 tsp dried rosemary
- 1/4 tsp smoked salt
- 1/4 tsp fresh black pepper
Tools needed
- Vegetable peeler
- Cutting board
- Chef's Knife
- Cookie sheet
Instructions
- Preheat oven to 425 degrees.
- Cut off the ends of all of the veggies.
- Peel all veggies then dice into bite sized pieces close in size so they roast evenly.
- Pour 1 tsp of olive oil onto a baking sheet and spread to coat.
- Season the baking sheet so both sides will be seasoned when you lay down the veggies.
- Place veggies on baking sheet and season the top.
- Place in oven for 7 minutes then turn veggies oven to prevent sticking and place back in the oven for 7 more minutes, repeating a total of 4 times for 28 minutes roasting time.
