I’m a sucker for quick dinners. Sometimes it’s all you can do to not hop online and order a pizza when the day has thrown its worst at you. Before you do, what if you could just throw together a quick flatbread-style pizza and be eating it and done by the time the pizza delivery dude showed up at your door? I say done and done!
This recipe is so customizable that you can take the basic concept and make 50 different kinds of pizza or more. From types of cheese to different hummus flavors and experimenting with your favorite crusty bread, the possibilities are truly endless. This recipe is one of our favorites go to’s and I hope you’ll love it too!

Notes
Cut in 4 pieces to serve as appetizer.
Customize with your favorite toppings.
Ingredients
- 8 oz boneless, skinless chicken breasts
- 2 slices Italian loaf
- 4 tbsp red pepper hummus
- 1/2 cup fresh pineapple chunks
- 3 tbsp BBQ sauce
- 1 scallion, chopped
- 2 oz shredded cheese of your choice
Instructions
- Preheat oven to 400 degrees.
- On one slice of Italian Loaf or your favorite artisan bread, spread 2 tbsp of red pepper hummus.
- Add 4 oz of grilled chicken.
- Add pineapple or other preferred toppings.
- Drizzle with BBQ Sauce or preferred condiment.
- Top with chopped scallions
- Finish with 1 oz shredded cheese.
- Repeat with other ingredients, place on cookie sheet and bake for 10 minutes.
- Cut in half on the diagonal to look like you're a restaurateur in disguise.
