There’s nothing I love more than a quick bread. I don’t mind their yeasty counterparts but something about being able to whip together and bake bread in the time it takes for a rise out of yeast bread and I’m in. When St. Patty’s Day rolls around, it’s all the more likely this delicious bread is going to be wafting through the kitchen because really, we all just need a reason to cook/bake something out of norm.
This bread is so dense and filling, you could make a breakfast off of it with some butter and jam and a cup of tea. I love that you can make it lean toward the savory side as is or sprinle some sugar on top for a sweet touch. It’s also perfect for add in’s like cheese, dried fruits, nuts or whatever you can dream up depending on your mood. You can always put the dry ingredients together and have them ready to pour into a bowl and just add the wet ingredients when the mood strikes…which will be often! Irish Brown Bread
Notes
You can use half whole wheat and half all purpose flour. Baking time may be reduced by 5 minutes so be sure to check on it.
Recipe adapted from King Arthurs Flour
Ingredients
- 4 cups White Whole Wheat Flour
- 3 tablespoons sugar (I used vanilla sugar)
- 1 1/2 cups buttermilk
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 1 large egg
- 1/4 cup melted butter
Topping
- 2 tablespoons melted butter
- Turbinado sugar (optional)
Instructions
- Preheat your oven to 375 degrees.
- To a bowl of 4 cups White Whole Wheat Flour, add 3 tablespoons sugar (I used vanilla sugar), 1 teaspoon baking powder, 1 teaspoon salt, and 1/2 teaspoon baking soda.
- To 1 1/2 cups buttermilk, add 1/4 cup melted butter and 1 large lightly beaten egg and stir to combine.
- Butter the sides and bottom of a 9” pan of your choice.
- Stir the dry ingredients and make a well in the middle.
- Add wet ingredients and stir until the dough comes together. (If you have some dry spots, you can add up to ¼ cup more buttermilk.)
- Brush 2 tbsp of melted butter on top before baking. If you want to make it slightly sweeter, add a sprinkle of turbinado sugar to the top.
- Bake for 50-55 minutes or until a toothpick in the center comes out clean. (The middle can be tricky sometimes so make sure to check a few spots.)
