When I was a kid, since I wasn’t Irish, I wasn’t a fan St. Patricks Day because it was just an excuse for kids to go around pinching each other if they weren’t wearing green. Since green isn’t my color, I never had anything, so I resorted to saying I had green underwear on which worked for a year or two because obviously, people weren’t going to check. When I got the side eye from the kid who questioned my authenticity and began to inch toward me, I said “green eyes…exempt!” I’ve been using it ever since. I remember a chick who has the last name of O’Rourke and she could be counted on to be out of school that day because her family took that holiday seriously. As a girl with no culture that I was raised with, I often envied the Irish, Italian and Greeks whose culture was ingrained in them and they were proud of it.
But when I moved into adulthood, I knew I could use those holidays I didn’t necessarily have a cultural connection with to try new recipes! We had Colcannon Potatoes at a restaurant once, and they explained they were Irish but they amped them up a little. Well, horseradish and potatoes don’t mix for our sinuses, so I made my own version that we loved.
Creamy mashed potatoes are mixed with a burst of spinach and my own special touch to make them deliciously magical. Pair them with some corned beef, and you’ve got an Irish celebration on your hands, and maybe a side dish that will be one of your new go to’s! The video shows you how to bring it all together and what the recipe should look like in different stages.

Colcannon Potatoes
Notes
For traditional Colcannon Potatoes, use cabbage or kale instead of spinach.
Ingredients
- 3 lb bag of yukon gold or preferred potatoes
- 1/2 cup milk (I used skim)
- 1/4 cup organic butter
- 1/2 - 1 tsp salt
- 1/2 tsp fresh black pepper
- 3 cups fresh spinach
- 1 head of garlic roasted
- 1/4 cup scallions, chopped
- 1 tbsp olive oil
Instructions
- Peel and cube 3 lbs of Yukon Gold potatoes. Place them in a big bowl of cold water so they don’t brown.
- To a dutch oven of 6 cups of boiling water, carefully add your potatoes.
- Season the water with salt and allow it to boil for 15 minutes or until fork tender.
- While potatoes are boiling, to a large skillet oven medium heat, add 1 tbsp of extra virgin olive oil.
- Add 3-4 cups of fresh spinach. Toss to coat.
- Add ¼ cup of chopped scallions, ½ tsp of fresh black pepper, and toss.
- When the spinach is almost wilted, add 1 head of roasted garlic. (See my tutorial here)
- Mix the garlic in until its incorporated and pull off the heat.
- Drain the potatoes when fork tender put them in a large bowl for mixing.
- Add ¼ cup of organic salted butter to the potatoes, ½ cup of milk and anywhere from ½ to 1 tsp of salt.
- Whip with a mixer until they’re smooth and then add the spinach folding it in.
- Transfer to a serving bowl if you’re taking it to the table and add generous pat of butter in the middle.

I have to say, I do love Colcannon potatoes with the cabbage but I like this spin on them. Even though right now I can’t have potatoes because of low-carb hell. But we have a cheat meal each week and I can see me sitting in front of the television eating Colcannon potatoes out of a pan on cheat day.
I’d say these are perfect for a cheat meal if you’re craving carbs. No judgment eating straight outta the pan either…we’ve all been there. 😉
