I love cookie butter. I can’t help it. Another thing I love? Biscoff cookies, like they serve on a major airline. That was always the best part of the flight was getting those slightly gingerbread-ish tasting cookies. When you mix both of them together, you have a taste that makes you do a happy dance. I’m not kidding. I literally gave one to my friend a few weeks ago as a surprise and she danced while she ate it.
I think anything that makes someone dance with their eyes closed is something I want to eat.
And I did.
Not gonna tell you how many.
These eggs have a doughy but slightly crisp bite to them. The spicy gingerbread like undertones paired with the mild white candy coating are perfectly married with each delectable bite. Cookie Butter Easter Eggs
Ingredients
- 1 bag Biscoff cookies
- 1/4-1/2 cup Biscoff or Speculoos Cookie Butter
- 1/4 cup evaporated milk
- 1/2 box vanilla CandiQuik
- Sprinkles
Instructions
- Add cookies to a food processor and pulse until they're crumbs.
- Microwave the Biscoff spread for 15 seconds and add to the cookie crumbs. Pulse until they combine.
- Add the evaporated milk one tablespoon at a time, pulsing after each addition until it pulls away from the sides of the processor.
- Shape into an egg and flatten slightly and place on a wax paper lined cookie sheet. Cover with plastic wrap and place in the freezer for 20-30 minutes until firm.
- Prepare melts according to instructions.
- Drop egg into melts and coat on all sides. Use a fork to lift from the melts and gently shake off the excess.
- Place back onto wax paper cookie sheet and immediately decorate with sprinkles.
- Repeat with all eggs and put in an airtight container for up to 5 days.
