I always dreamed of seeing New England in the fall. Back in 2014 we decided to do a road trip through New York, Vermont, New Hampshire and Bar Harbor, Maine was our final destination to see Acadia National Park. Upon doing extensive Yelp research, I kept hearing about these biscuits and strawberry butter at 2 Cats Restaurant. I figured since they were within walking distance of our rental home, it was meant to be. We enjoyed a nice breakfast there on Mr. Kringle’s birthday and the biscuits were delish. I knew I would recreate that one some day and that day is today.
The biscuits are super easy to make and the strawberry butter uses freeze dried for more strawberry color and flavor. That means even if you get a hankerin’ for these in the winter, you can still enjoy melty strawberry goodness slathered on a buttermilk biscuit. The video shows you how to bring it all together and what the recipe should look like in different stages.

Tea Biscuits with Strawberry Butter
Ingredients
- 2 cups all purpose flour
- 1 tbsp baking powder
- 1/4 tsp baking soda
- 1 tbsp sugar (I used vanilla sugar)
- 1/2 tsp cream of tartar
- 1/4 tsp salt
- 1/2 cup organic butter (or shortening)
- 3/4 cup buttermilk
For butter:
- 1/4-1/2 cup butter, softened
- 1/2 ounce freeze dried strawberries
- 1 tsp sugar or honey (optional)
Instructions
- Preheat oven to 450 degrees.
- In a large bowl, add the flour, baking powder, baking soda, sugar, cream of tartar, and salt and stir until combined.
- Cube 1 stick (1/2 cup) butter or shortening and work into the flour mixture with your hands or pastry cutter until the flour resembles coarse crumbs
- Make a well in the middle and add buttermilk. Stir until dough forms.
- Lightly flour surface and knead 10-12 times to bring the dough together.
- Roll about 1/2" thick to yield 12 biscuits (1" thick if you want six bigger biscuits)
- Using a floured biscuit cutter or glass rim, cut biscuits and place on cookie sheet.
- Bake 10-12 minutes until golden brown on top.
- While biscuits are baking, pour 1/2 ounce of freeze dried strawberries into a small blender and pulverize until only dust remains.
- Pour strawberry dust into softened butter and stir until well combined. Because the strawberries are unsweetened, taste the butter and determine if you prefer to add some sugar or honey to sweeten slightly.

They sound interesting & delicious! I am from Australia & these look like a version of our scones. Biscuits to us are what you call cookies.
I am coeliac, so I could convert these to gluten free, I love the strawberry butter idea! We normally serve our scones with strawberry jam & whipped cream.
