One of our favorite restaurants on the island of Kauai, the Hukilau Lanai. They have this seafood mixed grill there that is to die for. Three different kinds of fish on a heavenly bed of rice. Or was it orzo? Or risotto? I can’t remember, and honestly, all I knew is I wanted to try to recreate something close to it at home. There would be nothing more lovely and unladylike than to fork feed myself straight out of the saucepan and call it a day.
Don’t let the reputation of risotto scare you either because this is easy peasy. Even if you’re not much of a coconut fan, the lite coconut milk is so subtle, all you really get is the creamy goodness without tasting like you’re downing a tropical drink. (Not that there’s anything wrong with that, mind you.) The lime gives a bright, fresh pop of flavor that balances perfectly for a bed that any seafood would be clamouring to climb onto.
So let’s get down to business and make this rice because you’ve got a virtual vacation to take! The video shows you how to bring it all together and what the recipe should look like in different stages.

Coconut Lime Risotto
Ingredients
- 1 cup Arborio rice
- 13 oz can lite coconut milk
- 1/2 cup water
- 1/2 tsp ground ginger
- 2 limes (zested and juice of one)
Instructions
- Zest two limes and set zest aside. Cut one lime for the recipe.
- In a saucepan over medium heat, add one 13 ounce can of lite coconut milk.
- If you have some clumps of coconut cream, give it a whisk to smooth it out.
- Add about ¼ of your total lime zest and ½ tsp of ground ginger to the milk. Let theit come slowly to a boil.
- Add 1 cup of Arborio rice and stir.
- Allow it to return to a boil before reducing the heat to low and covering it.
- After 10 minutes, give it a stir and cover it. Check it every 5 minutes until the rice begins plumping up and squeeze the lime juice in the pan. Stir and cover for 5 minutes.
- Taste and if there is still a firmness to the rice, add as little as ¼ -½ cup of water until all of the liquid is absorbed.
- Garnish with lime zest and serve with your favorite seafood.

Well if you love coconut then you’re going to love this! You could also omit the lime and add 1 tsp of vanilla extract for a sweeter rice pudding too!
