When I was a kid, I remember my mom would occasionally get cans of cashews. We would blow throw that baby in record time because let’s face it, cashews are delicious. As an adult, I never buy them because I know I have no self control around them. One day I decided to buy a bag of them and I thought “hmm, I bet I could candy these babies!” It’d been a long time since I candied nuts but dang was it worth it!
Do you have any idea how bad I wanted to slam my face into that pan!?! I envisioned Mr. Kringle coming downstairs asking me what I was doing and when I said, “nothing”, he would peel 5 stuck cashews from my face. I thought about just sitting it between the two of us and breaking off hunks of it while we binged watched something on Netflix. Saner heads prevailed and I decided to do two little four ounce jars for us (after ample quality control) and send the rest to his work. They were promptly inhaled from what I was told. Cinnamon Candied Cashews
Notes
Makes a perfect gift!
Ingredients
- 3/4 cup water
- 1 1/2 cups sugar (I used vanilla sugar)
- 1 tbsp cinnamon
- 1/8 tsp salt
- 4 cups salted cashews
Instructions
- In a large pot over medium low heat with a candy thermometer, add water, sugar (I used vanilla sugar), cinnamon and salt.
- Stir to help the sugar dissolve.
- As you get closer to 240, or soft ball stage, the mixture will begin to get foamy so watch it closely those last few degrees after removing the candy thermometer.
- When the mixture starts to leave a trail from the spoon, add your 4 cups salted cashews and stir to coat all of the nuts.
- Pour them onto a lined cookie sheet and spread evenly so they don’t clump together as they dry.
- Place it on a cooling rack so that there is even circulation as it hardens.
- Cover with wax paper as it dries. The candy mixture should look dull and be totally cooled.
- Break into pieces to get ready to enjoy!
