I don’t know about you but I love comfort food. For me, there’s nothing more comforting than the flavors of chicken cordon bleu. Chicken, ham and cheese all cozy is pretty delicious on its own but you add pasta and alfredo sauce to the party and you might as well just prepare to sleep the rest of the night! I made this when I had a few lasagna noodles left and didn’t want to throw them out. I can tell you, I was so glad I did!
Layers of ham, chicken, and a delicious filling slathered with alfredo sauce and cheese. Oh my goodness, I’m ready to make the next batch! It’s perfect with a nice side salad and since I used a few healthier items like whole grain pasta, light alfredo and a cheese with less sodium in it, it had all the comfort and half the guilt. Chicken Cordon Bleu Roll Ups
Ingredients
- 4 lasagna noodles
- 10 ounces chicken breast
- 1/4 cup mascarpone (or ricotta) cheese
- 1 jar light alfredo sauce
- 4-6 ounces of good sliced ham
- 1 cup Shredded swiss cheese
- Fresh herbs (I used basil)
- Black pepper
- Garlic powder
Instructions
- Add about 10 ounces of chicken to a pot of water and boil them until they’re tender.
- While those cook, in a bowl add about ¼ cup of mascarpone and ¼ cup of Alfredo sauce. Stir until combined and add a few chopped basil leaves.
- When the chicken is done, move it to a bowl to be shredded. Reserve the brothy water and add your lasagna noodles to the boiling broth.
- Boil for 8-9 minutes or until al dente.
- While those are cooking, get 4 slices of good ham and cube into bite sized pieces then shred your chicken.
- Pour a little alfredo in the bottom of an 8x8 pan and heat your oven to 375 degrees.
- Place your boiled lasagna noodles on a plate to be filled.
- Layer some of the alfredo/marscapone mixture onto the noodle and spread out evenly over the length of the pasta.
- Then sprinkle the shredded chicken on top. Season with your favorite spices like black pepper and garlic powder.
- Layer the bits of ham.
- Top with some shredded swiss cheese over the ham.
- Gently roll the lasagna noodle up. Place them in the 8x8 pan and repeat.
- Generously slather with light alfredo sauce, a few ham bits on top and then sprinkle with a serving of swiss and cover with foil.
- Bake in the oven for 15 minutes then allow to cook uncovered for 5 more minutes or until the top is bubbly.

WHAT ARE YOU DOING TO ME??? I am on a low-cal diet for the past two weeks because I just want to stop looking like I am six months pregnant.
But then I see a recipe like this and I am like EFF IT, I’LL TELL PEOPLE IT’S A GIRL AND I’M DUE IN DECEMBER.
Hey I used light Alfredo, whole wheat noodles and Swiss cheese which is the lower cal cheese… totally justifiable!! 😂
OOO, yum, this looks good. Wrapping it all up in the pasta like this seems more practical that the traditional method where I always end up with a piece of chicken with a slice of ham inside, sitting in a pool of cheese !
