My hubby is a salad dressing fiend. You never know what dressing he’s going to pick up for his daily salad. Poppyseed, bacon onion vinaigrette, vidalia onion, Italian, etc. While it’s well and good to have all of these choices, they also come with preservatives and additives that aren’t the greatest for you. That’s why I love seeing what I can do and when he called my latest dressing “stupid good”, I knew I had a hit!
Roasted Garlic Vinaigrette is a great way to sass up your salad. That slightly sweet, creamy texture of the roasted garlic paired with the traditional tang of vinaigrette is a crowd pleaser every time. Well, for my crowd, at least! It comes together very quickly and is best made the night before so the flavors can marry. This also makes an insanely good marinade for your steaks, chicken, fish, or whatever protein you want to fire up on the grill. (Which you could then use to top the salad…double win!) The video shows you how to bring it all together and what the recipe should look like in different stages.

Ingredients
- 1/2 cup organic extra virgin olive oil
- 1/4 cup white or rice wine vinegar (rice wine vinegar has less of a vinegar taste)
- 2 heads of roasted garlic (see tutorial)
- 1/4 tsp fresh ground black pepper
- 1/4 tsp salt
- 1/2-1 tsp fresh thyme leaves
Instructions
- In a large bowl add ½ cup of extra virgin olive oil, ¼ cup of white wine or rice vinegar, 1 tsp of fresh thyme and two small heads of roasted garlic.
- Add fresh ground black pepper, about ¼ tsp and I used ¼ tsp of red Hawaiian sea salt.
- Using a whisk, break up the roasted garlic and then give it a good stir to incorporate all of the ingredients.
- Store in an air tight container in the fridge for 7-10 days.

This sounds delicious! I’m of the opinion that there is no such thing as too much garlic (thankfully, my husband agrees!) I’m going to give this a try. I’ve never through to put roasted garlic as a dressing. Pinning for later!
