You know how sometimes you want to have a healthy frozen treat so you grab (or make) chocolate covered bananas and because you used fair trade, 72% dark chocolate, and triple dipped it that it’s still healthy? This is not that treat. This is the treat you say “there’s a banana inside so it’s healthier than what I COULD have grabbed but at least it’s not a Twinkie in the middle.”
Huh? Sorry…I was thinking about Twinkies. Deep fried Twinkies and fair season is coming up.

So you may have heard of Banoffee Pie which is delicious on its own but this is a sinfully twist to help cool you down on these gross summer days. Yeah, I said gross because that’s the only way to describe a day where you get up at 7am and all of your windows are covered with condensation from the swamp hanging in the air outside. This baby is perfect for days like that or when 5:30 hits. (A.M. or P.M….I don’t judge) Crunchy chocolate toffee bits surrounding a frozen banana with an especially delicious “glue” to hold it all together!

Ingredients
- 1 large banana
- 1/4 cup chocolate toffee bits
- 1 cup caramel chips
- 1 tsp organic coconut oil
Items needed:
- Lollipop sticks
- Wax paper
- Small Cookie Sheet
Instructions
- Peel banana and cut it in half.
- Insert the lollipop sticks so they go 3/4 of the way up.
- Freeze on a cookie sheet covered with wax paper until frozen solid.
- Set up a small plate with 1/4 cup of chocolate covered toffee bits spread out and ready to go.
- Set up a double boiler with water on a simmer and put a metal mixing bowl and slowly melt 1 cup of caramel chips. When they begin to melt, add 1 tsp of coconut oil and stir until the consistency is smooth and remove from heat.
- Spoon the caramel mixture over the frozen banana (working with 1/4-1/2 banana at a time as it sets quickly) and dip into the toffee bits. Repeat until banana is coated.
- Place on wax paper lined cookie sheet again and freeze for 10 minutes. If you're going to serve immediately, they're ready to go. If you're going to serve later, wrap each one in plastic wrap and place in a freezer safe bag.

I got mine at Target (Ghirardelli brand) and have seen them at regular grocery stores and World Market too. Hershey’s also makes a sea salt caramel version. If you can’t find any of those, butterscotch would probably be the closest match. Hmmmm…. LOL
