I’ve got a confession to make. I was never a fan of peaches. Something about the fuzzy texture of the skin on my tongue made me cringe as a kid, wince as a teen, and recoil as an adult. Then middle age hit and I was all “hey, maybe I like peaches?” Then I tried this recipe and it was confirmed. Besides peaches are apparently all the rage, I mean you’ve seen social media…peach emojis everywhere. *wink*
Peach season is short so you should probably make this as often as possible. I know I will…fuzzy skin be darned! The cool thing about this is even if you’re watching your sugar, just omit the sugar and use some vanilla paste or even pie spice (about 1/4 tsp) to the mascarpone and you’ve still got a great, flavorful topping! (affiliate links) The hubby thought it was cream cheese frosting by the texture (but I hate cream cheese frosting so don’t let my cream cheese frosting haters get scared off by that statement!) but it was also light tasting like whipped cream. It truly tastes like Peaches and Cream and I don’t mean the way you might remember by chewing the hair of the Strawberry Shortcake character Peach Blush as a kid. I’m talking juicy, creamy, sweet goodness that screams summertime in the best way! The video shows you how to bring it all together and what the recipe should look like in different stages.

Grilled Peaches with Vanilla Mascarpone
Notes
You can sub cinnamon sugar for vanilla sugar in a pinch.
Ingredients
- 1 ripe peach
- 2 ounces mascarpone cheese
- 1 tbsp vanilla sugar (see my tutorial)
- 1 tsp butter (or cooking spray)
Instructions
- Measure 2 ounces of the mascarpone cheese and place into a small bowl.
- Mash or defrost for 5 seconds in the microwave until it’s softened slightly.
- Add ¾ of the 1 tbsp of vanilla sugar to the cheese and save a few pinches back.
- Stir in the sugar until incorporated and cover with plastic wrap and place it in the fridge.
- Cut the peach in half and twist it apart. Use a spoon to lightly trace around and remove the pit.
- Use a paper towel to blot the juice off of the sliced edge of the peach that will come in contact with the grill. Just before you’re ready to grill them up, sprinkle a pinch of sugar on the edges to create a caramelized crust.
- Use cooking spray or a swipe of butter to ready the grill or grill pan.
- Place the peach halves cut side down over medium high heat and grill for 1-2 minutes or until the grill marks are to your liking making sure not to over cook them.
- Add a scoop of the vanilla mascarpone to the middle and enjoy!

Bwaahaha! Caterpiller skin sums it up! Luckily that slight grill softens it just enough but nectarines would be perfect for this!
