Everyone is tripping over their lower lip about summer winding down but it’s not over yet! This Grilled Tropical Salsa is like the best of your real (or wished for) summer vacation in the tropics. You know, when you tried that new thing at that place with your toes in the sand and a sangria in your hand?
If you didn’t get to go to a tropical location, this sassy addition takes you on a virtual vacation in one bite.
Perfect for fish tacos, on BBQ pork chops, over teriyaki chicken breast or a nice addition to roasted garlic spaghetti squash too! You can mix and match different fruits that are in season and experiment to find your favorite combo. Grilling your fruits and onion give such amazing flavor that you didn’t know this is the summer accompaniment you’ve been missing all season! The video shows you how to bring it all together and what the recipe should look like in different stages.

Grilled Tropical Salsa
Notes
Peaches or papayas are a great substitution for mangoes.
Ingredients
- 1 ripe mango
- 1 medium red onion
- 1/2 pineapple, cut into slices
- 1/4-1/2 tsp ground ginger (optional)
- Oil or cooking spray
Instructions
- Heat your grill or grill pan over medium high heat.
- Slice your red onion into 1/4-1/2" slices.
- Oil your grill/pan and place the onions down to cook for 4 minutes per side.
- While those are cooking, core the pineapple since it's tough.
- When the onions are done, set them aside on the cutting board to cool and place your pineapple on the grill.
- Grill for 4 minutes per side as well.
- While pineapple is cooking, peel the mango. (See video for easy instruction)
- Remove pineapple to cutting board and place mango on the grill.
- Grill for 2-3 minutes per side.
- Cut all ingredients into preferred size. (I cut it smallish chunks)
- Add ginger if you've opted for it and give a toss to combine.
- It's ready to top your favorite dish!
