I love me some banana bread. I mean, big time. The only problem is I can’t stop at just one piece. Then I go and do crazy stuff to it. So yeah, my name is Mrs. Kringle and I’m a banana bread addict. Here’s how I solve all of that without using added sugar and eat a breakfast that keeps me full all day long.
This Banana Bread Oatmeal is light and fluffy and uses dates as a natural sugar source. Now don’t go wrinkling up your nose at dates! (It’s okay, I used to too.) Dates are awesome even if they look like….well, I’m sure you’ll think of something when you see me with them in the video. But seriously, dates have this beautiful caramel like taste that is perfect for this bowl of yum. It’s the kind of good that when you start thinking about it you hear Barry White music come on, the lights dim and your mind goes straight to the culinary seduction.

You can make this the night before for "overnight oats" and just heat it for 60-90 seconds in the microwave in the morning for a quick breakfast.
Ingredients
- 1/2 cup (40g) quick cook oats
- 1 medium banana, ripe
- 2 medjool dates, pitted and boiled
- 1/4 tsp cinnamon or pie spice
- 4 ounces milk
- 15g (1/2 serving) walnuts or nuts of your choice
Instructions
- Boil water in a saucepan and place two pitted dates in the water for about five minutes or until the skin peels back.
- Measure out 1/2 cup (40g) of quick cook oats.
- Add the cinnamon/pie spice.
- Peel cooled dates of their skin and place in a bowl to mash.
- Add the chunks of one ripe banana to the dates and mash together into a paste.
- Add 2 ounces of the milk to the oats, then half of the banana paste, then the last 2 ounces of milk.
- Stir to combine.
- Heat in microwave for 1 minutes.
- Add remaining banana mixture and fold into the oats and top with walnuts.
- Enjoy!
