We are chili fanatics in this house. Chili season just cannot come quick enough for us and this is the epitome of fall chili. Now don’t let the fact there is pumpkin in this weird you out, it doesn’t do much more than give beautiful color and a great body to the chili especially if you like it thicker like we do. I found some chicken chorizo in the meat department and knew it would be perfect for this. As with pretty much every chili, the longer it sits, the better it gets.
Second and third day chili is my jam and if there’s any left over, it gets frozen for a nice batch of chili cheese fries when the mood strikes. (Is there ever a time chili cheese fries ISN’T in order though?) I am a huge fan of using tomato soup as the base for chili when I want some of the work taken out of it for me. It also gives a great creaminess to it and cuts a bit of the acidity of using pure tomato sauce or stewed tomatoes. Pumpkin Chorizo Chili
Ingredients
- 1 lb chorizo (pork or chicken - I used chicken), browned
- 1 box Roasted Red Pepper and Tomato Soup
- 2 cups kidney beans, cooked
- 1 poblano pepper, diced
- 15 ounce can pumpkin puree (not pie filling)
- 1 small can tomato paste
- 4-6 ounces apple cider
- 1 tbsp chili powder
- 1 tsp smoked paprika
- 1/4 tsp allspice
- 1 tsp berbere
- 1 tsp cumin
- 1/2 chipotle powder (optional but worth it)
- Black pepper to taste
Instructions
- In a large dutch oven, brown chorizo until cooked thoroughly.
- Saute poblano pepper for 3-5 minutes.
- Add soup, tomato paste, pumpkin, cider and all spices and stir to combine.
- Add beans and gently stir to incorporate.
- Allow to simmer for 30-45 minutes.
- Serve with your favorite crackers or over regular or sweet potato fries.

I never thought to use pumpkin as part of a chili recipe, especially since it doesn’t alter the taste. At first I was trying to visualize how chili would taste with pumpkin…I think it wouldn’t be that bad and probably kind of unique. #happynowlinkup
You would never know it’s there if you don’t want to. It’s more for color and depth. But you could always add 1 tsp of allspice just to help amp up the fall flavor!
