I remember the first time I tasted cookie butter, it was heaven. It was my mission to get everyone around me to love it too. If someone was visiting, I’d open the door, give them a hug and shove a spoonful of cookie butter in their mouth and watch them melt into a puddle. Then they’d get that crazed look in their eye and we’d have to wrestle for the jar. Me and my big ideas. Speaking of which, when I had this idea I knew I’d have to make it when it could be pawned off on co-workers because if this whole batch had been sitting around here, it would’ve been over for us.
The feedback from co-workers? “Addictive!” Don’t I know it! If you like the graham cracker gingerbread hybrid taste of cookie butter, you add some cookie dust into the mix for even more texture and flavor and you’re going to need a 12 step program if you have no one to share this with. You’ve been warned! This makes the perfect gift come holiday time or to bring as a snack to gatherings. Cookie Butter Muddy Buddies
Notes
Makes a perfect gift in mason jars! Add some seasonal sprinkles for holiday gifts or gatherings!
Ingredients
- 6 cups corn Chex
- 3/4 cup cookie butter (I used crunchy)
- 4 ounces vanilla candy melts
- 8.8 bag Lotus Biscoff Cookies
- 1/2 tsp vanilla
- 1/2 cup powdered sugar
Instructions
- Place 6 cups of cereal into a large bowl and set aside.
- Place 1 bag of Lotus Biscoff (or Trader Joe's Speculoos) cookies into a food processor and pulse until they are crumbs and set aside. (You can put them in a large ziptop bag and use a rolling pin if you don't have a food processor or blender)
- Place the cookie butter and vanilla melts In a microwave safe container and microwave for one minute, then stir and add vanilla and microwave in 15 second increments if needed until melted.
- Pour half of the cookie butter mixture over the cereal and lightly toss to keep them intact. Then pour the other half on and toss lightly until coated.
- Spoon the cereal into the large bag of cookie crumbs and toss to coat.
- Using a small strainer, sprinkle 1/4 of the powdered sugar over the top of the cereal and toss and repeat process until powdered sugar is gone.
- Spread onto a lined cookie sheet and allow to cool for 45 minutes or until dry before storing in an airtight container.

Recipe does not have directions for the Biscoff cookies being used as cookie crumbs as the video does.
