I mean really, can you think of a more Fall muffin than that title? It’s filled with all of the best flavors of autumn from the pumpkin puree to the apple cider to the applesauce I subbed for oil because I wanted to pretend they’re healthy. Then you added sea salt caramel chips and oh baby. It made them really hard to share, but I had to. Because these muffins are not just perfect for you to freeze then pull them out the night before for breakfast on the run…they’re the perfect comfort food for any occasion. Someone you know stressed beyond their limits? These muffins will help. Do you know someone going through an illness or a caretaker? They will love you forever for a basket of these. Do you know someone who loves all things Fall and you want to surprise them because you’re cool like dat? These are it, daddio! (Sorry, I think I channeled the McFly’s on that one.) I mean look at ’em…who could resist??
These are adapted from the ones on Libby’s website with a few tweaks to make them to our liking. As I was typing this, they were baking in the oven, and it’s like lighting your favorite fall candle without the fire hazard, and you get something yummy to eat at the end! BONUS! The video shows you how to bring it all together and what the recipe should look like in different stages.

Ingredients
- 3 cups all-purpose flour
- 1 1/2 tablespoon pumpkin pie spice
- 2 teaspoons baking soda
- 1 1/2 teaspoons salt
- 2 cups granulated sugar
- 15 oz can pumpkin puree
- 4 large eggs
- 1/2 cup applesauce
- 1/2 cup apple cider
- 1/2 cup sea salt caramel baking chips
Instructions
- Preheat oven to 350 degrees.
- In a medium bowl, add the flour, pumpkin pie spice, baking soda, and salt and stir until combined and set aside.
- In a large bowl, add pumpkin puree, sugar, eggs, applesauce and cider and stir carefully until just incorporated.
- Add 1/2 of the flour mixture to the pumpkin mixture, and stir. Then the rest of the flour and stir just until it comes together. Add the caramel chips and fold them in.
- Line a muffin tin with liners and using a cookie scoop, fill the liners 3/4 of the way up.
- Bake for 25-30 min minutes and toothpick test one or two in the middle.

Where can I get those sea salt caramel baking chips?? I might even eat them out of the bag.
I’ve seen them at Target but think I got mine just at the regular ol’ grocery. They’re a little harder to find but worth stocking up on when you do!
