There are a lot of really cool Halloween recipes out there, and I love to see how creative people can be with their treats. I’m also a realist. I once made cute little spider truffles for a work thing. and while people raved about them, I spent an hour cursing them and their little pretzel legs. I got so stressed out over them, I vowed never to make them again. (I’ll probably make them next year because I never keep a promise to myself.) While I love creating fun recipes that take a little more time, I’m an even bigger fan of making and sharing recipes people will actually make.
A friend of mine shared this recipe with me years ago and said they were her favorite brownies, perfect for ice cream sundaes and she was right. I’m a fan of fudgy brownies and these are the perfect balance between fudgy and cakey. (More fudgy in a 13×9 pan and more cakey in an 8×8) Then one day when I wasn’t feeling like putting in much effort, I just jammed a Halloween cookie in there and voila…Halloween treat with minimal effort and maximum cuteness.
The chocolate component to these brownies is something you mama’s may already have on hand…Nesquik® Chocolate Powder! It gives that perfect nostalgic chocolate taste and when I saw there was a nice amount of iron and over 100% of biotin in the nutritional info, I declared them possibly good for anemia and nail growth*. (*– in my dreams. I was joking. I shouldn’t have to write that but you see the world we live in.)
I was told when they were taken in to work (too dangerous to keep around the house) they were gone by 8:30 am. Apparently, any time is a good time for brownie time. The video shows you how to bring it all together and what the recipe should look like in different stages.

Perfect consistency for brownie sundaes!
Ingredients
- 1⅓ cup all purpose flour
- 1½ cup Nesquik® Chocolate Powder
- ½ tsp baking powder
- ¼ tsp salt
- ½ cup granulated sugar
- ½ cup brown sugar
- 1 tsp vanilla
- ¾ cup butter, melted and cooled
- 2 eggs
- 12-16 Halloween sandwich cookies (I used Trader Joe's Halloween cookies)
Instructions
- Preheat oven to 350 degrees.
- Melt your butter in a microwave safe dish on defrost so it doesn't get too hot. (I do defrost 3 which is just under a minute until the butter is 3/4 melted then stir it the rest of the way.) Set aside.
- In a large bowl, add flour, chocolate powder, baking powder, salt, brown and granulated sugars. Stir to combine and set aside.
- In a medium bowl, add your two eggs, vanilla and whisk in your cooled melted butter.
- Add egg mixture to flour mixture and stir until thoroughly combined. Batter will be very thick.
- Spread batter into a greased 13x9 pan and place cookies on top as seen in video.
- Bake for 25-28 minutes or until a toothpick comes out clean.
- Allow to cool for 10 minutes in pan and serve.
