This time of year begs for apple treats. You might have a bunch of apples left in the fridge from your apple picking adventures and need an excuse to bake something awesome. I love easy desserts. I also love easy desserts that can double as breakfast and this is one of them.
Puff pastry is one of those things that Ina Garten says is perfectly acceptable to use store bought so you know I’m down with that. Plus I don’t even know how to make puff pastry. Honestly, I don’t want to know how when I can grab some from the freezer and thaw it in 20 minutes so I can make something like this. If you haven’t had puff pastry, it’s reminiscent of a croissant texture so you can imagine an apple tart made with it is pretty darn amazing. I’ve got a little trick to keeping the bottom from getting soggy that makes it taste even better. This is ideal for the upcoming holiday season (or a Tuesday night) since it’s easy to throw together. You’ll be digging in in no time!

Ingredients
- 1 lb granny smith apples, peeled and cored
- 3 Tbsp butter
- 1/4 cup dark brown sugar
- 1 tsp cinnamon
- 1 sheet frozen puff pastry, thawed
- All purpose flour for rolling
- 1 egg + 1 tbsp water for egg wash
- Vanilla or turbinado sugar for sprinkling
Apple Pie Glaze
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 1 tbsp (ish) milk
Instructions
- Preheat oven to 400 degrees.
- Pull a sheet of puff pastry out of the freeze and place it on a lined cookie sheet to thaw.
- In a saucepan over medium heat, melt butter. Peel, core and slice apples into thirds and place in melted butter.
- Sprinkle cinnamon on top and toss to coat and cook for 5 minutes.
- Add brown sugar, reduce heat to low and stir to coat. Cook for 5 more minutes.
- Flour your surface and carefully roll out the puff pastry. If the middle of the roll is still frozen, place your hand on it and it will soften the rest of the way.
- Find the middle of your dough and cut it length wise. On one side, roll the edges up about 1/4-1/2" to create a small "wall" to hold in the filling.
- Spoon the apples into the welled side of the pastry leaving behind any brown sugar goo in the pan so the bottom doesn't get soggy.
- Place the other sheet of pastry on top and use a knife to make about 4-6 steam cuts on top. Brush your egg wash on top and sprinkle on the vanilla or turbinado sugar.
- Bake for 15-18 minutes or until golden brown on top.
- In a small bowl with the powdered sugar, add the brown sugar goo, vanilla and thin with milk for a drizzle consistency.
- Allow to cool for 10 minutes, drizzle glaze on top and serve.
