It might just be me, but I can’t get the song “here were come a-wassailing among the leaves so green” out of my head when I make this. This is a dish that will make you sing not just from how easy it is but how incredibly elegant. It makes you look like a fancy pants but still has the taste of a cozy crustless pie. The flesh of the pear is so velvety that it cuts like buttah.
Trader Joe’s sells wassail, but if you don’t have access to it, you can use spiced wine or mulled cider to get the same taste. It also acts as a free air freshener because between the poached pears and the spices of the wassail reducing; the house smells heavenly. The big pay off for me though is drizzling on the syrupy goodness when the sauce is reduced.

Ingredients
- 2 ripe Bosc Pears
- 2-3 cups wassail (or spiced wine/mulled cider)
- 2-3 tbsp sugar
Instructions
- Pour wassail/wine into a saucepan over medium high heat.
- Peel your pears making sure to get all of the skin up to the stem; leaving the stem intact.
- Cut the bottom of the pear so it sits upright on a flat surface.
- Gently place your pears in your wassail or wine for 10-13 minutes carefully turning them every 3-5 minutes so they poach evenly.
- Place the pears in a dish to cool down while you let the wassail or wine reduce.
- Add the sugar, give it a stir and reduce the heat to medium.
- Swirl on occasion so the spices don’t burn. When it gets almost to syrup consistency, it will start bubbling up.
- Reduce the heat to low and stir or swirl constantly until you reach the desired consistency.
- Carefully plate your pear and then drizzle the syrup on top.
