I’m not a huge fan of traditional no-bake cookies but a friend made these once, and I was hooked. The butterscotch flavor is subtle, and the add-ins really shine to make a cookie that is irresistible. If you’ve got a recipe that calls for a little evaporated milk, you can justify making these cookies because you don’t want to waste the can! They’re cutting back on food waste one glorious cookie at a time.
The oats give a hearty bite, and because they’re oats, they have fiber, so this is kind of like a health food? Okay, maybe not…a lady can try. I like this recipe because there are more oats than glop. That’s a culinary term, right? While the glop is delicious, it can be overwhelmingly sweet but if you prefer more glop, just reduce the oats by 1/2 cup. I’ll stop saying glop now.

If you’ve got a cookie swap or potluck coming up, they are just classic enough with a twist to be a favorite so have the recipe handy because people will be asking for it. You may be wondering if you can freeze them and because I have your back, I froze two for research purposes then thawed them on the counter a week later. I am happy to report they are just as delicious so definitely include this in your make ahead list!

Total time includes cooling time.
If dough is a little dry, a tsp of two of evaporated milk until it holds together.
Ingredients
- 2 cups granulated sugar
- 3/4 cup butter
- 2/3 cup evaporated milk
- 1 pkg instant butterscotch pudding mix (3.4 oz)
- 4 cups quick oats
- 1/4 tsp sea salt
- 1/2 cup butterscotch chips
- 1/2 cup semi-sweet chocolate chips
- 1/2 cup toffee bits
Instructions
- Bring sugar, butter, and evaporated milk to a rolling boil over medium heat. Stirring frequently.
- Remove from heat and add packet of butterscotch pudding mix, and salt and stir. Add oats and stir to incorporate thoroughly. Add the butterscotch chips and stir. Allow to cool for a few minutes. Then add toffee bits and chocolate chips and fold in.
- Line a cookie sheet with silicone mat or wax paper.
- Scoop cookie dough onto cookie sheet and shape into a ball and flatten slightly.
- Let them sit for 20-25 minutes.

So then I was reading the recipe and thought it might be too much butterscotch for me THEN I saw the addition of the chocolate chips and realized we really are blog soul mates.
