If you love white chocolate mac nut cookies, these are a notch above. Chocolate covered toffee bits add a little something something that just puts a big smile on your face. They have a nice chewy center with crispy edges and big chunks of macadamia goodness. It’s like a little vacation whenever you need one. Perfect for ice cream sandwiches in the summer or if you want to leave Santa a few for some variety. I’m sure he likes toffee too. Ingredients
- 1/2 cup butter, softened
- 2/3 cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup plus 2 tablespoons all-purpose flour
- 1/2 teaspoon baking soda
- 1 cup macadamia nuts, chopped
- 1/2 cup white baking chips
- 1/2 cup toffee bits
Instructions
- Preheat oven to 350°.
- In a large bowl, cream butter and sugar until fluffy, about 3 minutes. Beat in egg and vanilla.
- In another bowl, whisk flour and baking soda and gradually add into the butter/sugar mixture.
- Stir in nuts, toffee bits and baking chips.
- Scoop dough with small cookie scoop or a heaping teaspoon 2" apart onto ungreased baking sheets.
- Bake 10-12 minutes or until golden brown.
- Cool on cookie sheets for 1-3 minutes.
- Transfer to wire racks to cool completely.
