With the holidays fast approaching, you may be looking for an easy “dump” breakfast you can serve the morning of the big day. I hate using the term “dump” when you’re talking about food but it really is that simple. My favorite thing is you can customize it so the possibilities are endless. Vegan sausage, bacon, kielbasa, prosciutto for the meat and a ton of cheese choices from simple cheddar, Swiss, or pepper jack to fancy pants ones like goat cheese, brie or feta. This Easy Breakfast Casserole can be assembled the night before and pop in the oven in the morning. By the time the presents have been opened and the stockings raided, this will be ready to go!
I like to do a good base recipe and then it’s up to you to customize how you like it. This one used bacon as the meat and pepper jack for the cheese. If you’re not into meat, you can always use vegan sausage, beans, tempeh bacon if you’re looking for vegetarian options. This would be awesome with a nice side dish like biscuits or cinnamon rolls because balance is about protein and carbs.

Notes
Customize with your favorite meats, veggies and cheese. This is a base recipe.
Ingredients
- 12 eggs
- 1/2 cup milk
- 5-6 slices bacon
- 20 ounce bag frozen hash browns
- 1 medium onion, diced
- 8 ounces preferred cheese (I used aged Swiss)
- Salt and pepper to taste
Instructions
- Preheat oven to 350 degrees if baking immediately.
- Brown bacon (or sausage if you're subbing) until cooked. Set aside and crumble when cool.
- Add diced onion to the bacon grease and saute until translucent.
- In a medium bowl, mix eggs and milk and set aside.
- In a large bowl, add your frozen hash browns, eggs, bacon, onion and half of your cheese and stir to combine.
- Spray or butter a 13x9 casserole dish and spoon mixture into the dish.
- Bake for 45-50 minutes or until center doesn't jiggle.
- Top with the rest of the cheese until bubbly.
- Cut carefully into 8 squares and serve.
