If you stumbled upon this post because you were looking for healthy recipes to get a little holiday dough off, howdy! I actually made this recipe out of spite. About two years ago, our grocery store discontinued our favorite jalapeno salmon burgers. I was not a happy lady, he was not a happy dude so I sought to rectify that. I don’t follow a low carb lifestyle but this just happens to fit into one. I used almond flour instead of panko because honestly, I knew after the holidays, that expensive bag of flour would likely sit there until its expiration date. So why not make something yummy a little better for us out of them.
I can’t tell you how happy we were with the results! They aren’t overly spicy since the seeds and ribs are not included with the jalapeno. I used an aged cheddar that had a great kick on its own and then you add the shallots, mustard and spices and man was it GOOD! Not only did I get to make us a big, ol mondo patty in lieu of their paltry pre-packaged deal but I got to control the sodium, taste and the hubby said it was better than theirs. So pffft!
I could certainly divide the mixture by 4 and make 4 1/2 ounce patties but that day it was go big or go home so I went for it. It was a 6 ounce dinner portion that I put on a big ol’ salad and the next day, we split the other one for a lunch salad. You could pre-make the patties then freeze them, separate with wax paper and then wrap well and store them in the freezer for when you need them. You could also cook up a batch and use them as part of your meal prep for the week. Exclude the cheese if you’re following a plan that frowns upon dairy and sub an equal amount of nutritional yeast. Ingredients
- 14 3/4 oz can Red Sockeye Salmon (usually by the tuna fish)
- 1 shallot, minced
- 1 garlic clove, minced
- 1 jalapeno, small dice
- 1 1/2 tsp jalapeno or dijon mustard
- 1/2-1 tsp Old Bay Seasoning
- 1/2 tsp fresh black pepper
- 1 oz sharp or aged cheddar, grated
- 2 eggs, beaten
- 1/3 cup almond flour
- 1 tbsp olive oil
Instructions
- Drain and rinse your salmon in the can. Add to a bowl and remove the skin and any bones you may find. Break it up with a fork.
- Add all of the remaining ingredients except the olive oil and mix well, then form into three or four patties.
- In a skillet over medium heat, add the olive oil and swirl to coat. Add the patties and cook for 5 minutes per side for three thicker patties or 4 minutes per side for four thinner patties.

I haven’t had salmon patties. It’s a but expensive in my side of the world, so I don’t get it often. If I do, I’ll make sure to remember this recipe. I love jalapeños and cheese. I am sure these taste fabulous! Thanks for sharing at this week’s Fiesta Friday party!
