I love roasting vegetables. Caramelized outside, tender inside and bursting with whatever flavor you choose to pair it with. If you’re not a huge curry fan, no worries, with this recipe, it works! I often find myself in a food rut and when I found some curry powder in the spice cabinet I got as a freebie, I thought “why not?”
I used ghost pepper flakes for a little extra kick (half the amount of regular red pepper flakes) but between that, the lime juice and curry, it was a welcome change from our usual. I love that this is healthy and can be roasted in the oven or popped on the grill in the summertime. I love this paired with the Jalapeno Cheddar Salmon Patties for a healthy but filling dinner! The video shows you how to bring it all together and what the recipe should look like in different stages.

Ingredients
- 1 head cauliflower
- 2 tbsp canola oil
- 1 tbsp lime juice
- 1 1/2 tsp curry powder
- 1/4 tsp salt
- 1/2 tsp pepper
- 1/2 tsp red pepper flakes (I used 1/4 tsp ghost pepper flakes from Trader Joe's)
Instructions
- Preheat oven to 400 degrees.
- Take one head of cauliflower and peel back the leaves and break into smallish sized florets. For the larger pieces, just cut them in half so they are all similar sizes.
- In a large bowl, add the rest of the ingredients. Stir until combined.
- Reserve about half of the oil mixture back then add your cauliflower into the bowl. Add the other half of the oil on top and stir to coat evenly.
- Add to a sheet pan and spread out the cauliflower.
- Roast for 10 minutes, remove from the oven and flip them over to roast for 10 more minutes.

Curry and cauliflower are a match made in heaven! I’d eat that as a side or as a main, maybe drizzled with a simple yogurt sauce! Happy FF!

Hi this is Kristina visiting from Fiesta Friday. This looks so good! My favorite thing to do in the kitchen is roast a big sheet of veggies and Cauliflower is one of the best veggies to roast, in my opinion.
It sure is! This marinade can easily be applied to broccoli, carrots and brussels sprouts too!

This sounds fantastic and you don’t even have to melt a bunch of cheese over it. I hadn’t heard of ghost pepper flakes and every once in a while overdue it with the regular red pepper flakes so I’ll be looking for those. I do love curry everything and am about to make a late supper with curried ground lamb and Brussel sprouts.
