Strawberries and Cream Fudge

Valentine’s Day is less than a week away, and you might want to do something a little different dessert-wise.  Sure, you can get a box of chocolates in a heart or chocolate covered strawberries but aren’t those so overdone?  Okay, maybe not but if the flavors of strawberries and cream are your thing, you are going to love this fudge.  You have no doubt heard of condensed milk fudge and how it makes fudge making one of the simplest things ever.  I’ve made Nutella fudge, gingerbread fudge and peanut butter lovers fudge using this method so there’s no flavor combo I won’t try.

The white chips always make me a little nervous because they can be finicky, but as long as the chips are all covered with the condensed milk, they melt up just fine.  What I love about this fudge is it has a mild strawberry taste and truly does taste like cream between the white chips and milk.  You could always add 1 tsp of strawberry extract after it goes through the microwave to amp up the strawberry flavor.   This is so good; it’s going to be hard to keep your hands off of it.

  1. Sounds good.
    I’m over in the UK and we don’t have anything here called specifically ‘white baking chips’ . Are they the kind of chocolate chips that you use in baking? As I type I’m thinking this is a silly question and the answer is most likely yes! We can get candy melt in specialist shops too but I’ve never that sure of the difference!

    1. Yeah, it’s just the white chocolate chips (but some people get weird since it’s not technically “chocolate”). You could also use the equivalent of vanilla candy melts or bark from a craft store as well. (11 oz.)

  2. This is different and perfect for Valentine’s Day. I might want to amp up the strawberry flavor, I suppose you shouldn’t add fresh strawberries to it, it would probably mess up the consistency. I’ve never thought about turning something freeze-dried into powder, very clever. Sometimes white chocolate can be very sweet, how would you rate the sweetness factor here?

    1. Yes, there’s too much moisture in the actual fruit to use it. The strawberry flavor is subtle. The strawberry extract I linked to in the post has the least fake strawberry taste I’ve found. Just a little bit will do. 😀 We don’t think it’s overly sweet but I know that can be subjective.
