I love to make homemade granola. It’s not just the crunch and texture but it’s knowing exactly what’s going into the batch. This Oatmeal Raisin Granola is the snack version of an oatmeal raisin cookie with a little less guilt. (You know you can’t eat just one oatmeal raisin cookie, those things are TOO good!) I know it can sound daunting to make your own granola over just buying a batch at the store but this is a fun one for the kids. Who doesn’t want to dig in there and get their hands all dirty in a good way? If they have a literal hand in making something, they’re more apt to eat it.
It’s great as a topping for your morning yogurt (parfait anyone?), a post workout snack or a little something sweet but not over the top when you have a wee case of snacking syndrome. I have to say though, if I don’t pre-portion this, I can easily get into trouble and it’s easy to think you’re eating healthy so you can have as much as you want. Nope. I buy little snack bags, weigh them on my food scale so they’re the exact right portion and I get 10 servings to put in a big mason jar. If I didn’t do, this would be me at snack time.

Ingredients
- 3 cups plain oats
- 1/4 cup raw honey of your choice (I used cinnamon)
- 1/4 cup coconut oil (cold pressed, organic and unrefined won't add a coconut taste)
- 1/8 tsp sea salt
- 1/2 tsp cinnamon
- 1/2 tsp vanilla
- 1 cup raisins
- 1/3 cup walnuts or pecans, chopped
Instructions
- Preheat oven to 350 degrees.
- In a large bowl, add oatmeal, salt and cinnamon, stir and set aside.
- Melt coconut oil in microwave. (I usually put it on defrost until melted but not hot.) Add to a small bowl with honey and vanilla.
- Pour honey/oil mixture into oats and use clean hands to mix and thoroughly coat them.
- Add the raisins and chopped walnuts and stir.
- Pour the oat mixture onto a large, lined cookie sheet and spread out evenly.
- Place in the oven for 10 minutes then move the oats around so they don't stick then bake for another 10-12 minutes until lightly browned.
- If it's too moist, turn off the heat and leave in the oven for 15 minutes with the oven door slightly ajar. (Make sure no munchkins are around!)
- Then allow to cool on the counter for 30 minutes before portioning out 8-10 servings for meals and/or snacks.

I made homemade granola bars years ago and they were delicious but didn’t form into bars very well. I am positive it was the baker and not the recipe. I cannot wait to try this, though. Love me some granola.
Try, try again! (I use boiled dates and mash ’em together.) I could chuck this stuff in my granola hole all day long…so good!
