If you like pina coladas and gettin’ caught in the…well, you know the rest. Actually, if you like pina coladas, you will love this pina colada fudge. Wait, where are you going!? Hear me out. I know it sounds weird but I thought about the logistics of this one day and figured the worst that could happen is I throw it out if it tastes like a mistake. The best that could, and did, happen?
People couldn’t keep their hands off of it, including me! I was a little nervous to give a piece to the hubby because he’s not a coconut drink kinda guy. He chewed with a discerning poker face and said “you know what, I wasn’t sure about this since I don’t think I like pina coladas but this is GOOD! Can we have more?” There ya have it straight from a skeptical source…sounds weird, tastes amazing!
The smooth white chocolate gives that creamy coconut feel of the drink especially when the rum extract kicks in. The texture of the dried pineapple and coconut flakes give a satisfying chew that make you feel like you’re on a tropical vacation. I haven’t tried this with real rum but I don’t see why it wouldn’t work but the extract gives a nice buttery taste as well so I highly recommend it.

Ingredients
- 11 oz bag white chocolate chips
- 14 oz can sweetened condensed milk
- 1/3 cup dried pineapple, diced
- 3/4 cup sweetened coconut flakes
- 1 1/2 - 2 tsp rum extract (start with 1 tsp and work up taste wise)
Instructions
- Dice dried pineapple slices if you can't find them already diced in the bulk section.
- Put white chocolate chips and sweetened condensed milk in a large microwave safe bowl and microwave for 2 min 20 seconds.
- While that's warming, line an 8x8 pan with parchment or wax paper.
- When the chips are done warming, stir and mash the white chips until melted.
- Add 1 tsp rum extract and taste taste. 1 1/2 is my preference for a light rum taste and 2 tsp will give you a full octane taste.
- Add dried pineapple and coconut flakes and stir to incorporate. Pour into lined pan.
- Cover well with plastic wrap and refrigerate at least 3 hours or until completely firm.
- Cut into preferred size squares (I usually do 36) and keep in fridge until ready to serve.
