If you’d told me about 5 years ago that I’d like key lime or lemon desserts, I would’ve politely called you a liar. I was missing out and I feel like I have a lot of years to make up. I have wrinkled my nose at desserts like these because I always thought of myself as a gal who was chocolate and vanilla loyal and wouldn’t like pucker power. I am so sorry my beauties…
The first time I tried Key Lime Pie was on Maui with a dessert flight and I was feeling adventurous so I ate the bite. I almost wrestled my husband for the other half but wanted him to try it too. From then on, I vowed to try all things lemon, lime, passion fruit, etc. I fell in love with passion fruit cream pie on that trip and I swear that 3 years later I’m still working it off. I made this recipe the day before the hubby was going back to work because I knew if I had access to this whole thing I’d probably slam my face in it and eat it with my hands. I mean, how can you resist that much shortbread goodness on your own?
Spring is in full swing so it’s time for those bright flavors that give your tastebuds an awakening! This is just the thing and will be a hit at Easter, BBQ’s, work potlucks or any excuse you can find to make it!

Notes
You could also line the pan with parchment paper and lift out to cut when totally chilled. Keeping it in the pan works best if you're transporting it.
Ingredients
Shortbread Crust
- 2 1/4 cups all purpose flour
- 1 cup (2 sticks) salted butter, room temperature
- 1/2 cup light brown sugar
Key Lime Filling
- 2 cups of sugar
- 1/4 cup + 2 tbsp all purpose flour
- 6 eggs, beaten
- 1 cup key lime juice (I used fresh but no shame in buying bottled)
Instructions
- If you're using fresh key lime juice, do yourself a favor and juice the day before.
- Preheat oven to 300.
- In a large bowl, cream together brown sugar and butter.
- Add to flour and use your clean hands to knead into a ball. (Or use a stand mixer)
- Press into a greased 13x9 pan and bake for 25-30 or until light golden brown.
- While the crust is baking, in a large bowl, add the sugar and flour together and stir until well combined.
- Add the beaten eggs and lime juice and beat or whisk together until a silky texture forms and set aside until the crust is ready.
- When crust is ready raise temperature to 325 degrees and allow to come to temperature if it isn't already.
- Pour filling over top of the crust and place in the oven 35-40 minutes or until the center doesn't jiggle.
- Allow to cool for 45-60 minutes then refrigerate for 2 hours before cutting into squares.
