You know how you have office potlucks where people either bring in the dish they’re famous for or whatever they could pick up on the clearance rack at the grocery store? We would count down to the occasional office shindig because that meant Sue was bringing her famous salsa. No one really knew what was so special about it but it was all of the right amounts of each ingredient for the perfect salsa.
I’ve got to admit, I HATE tomatoes. I like things made with tomatoes like ketchup, marinara sauce and salsa. Yes, I’m 7 years old on the inside. I’m not even a fan of cilantro but when all of these ingredients come together, it turned all of us lemming-like office workers into dingoes after a long winter. If you didn’t get it by 10 am, you weren’t getting it. I even saw a dude literally stand at the coummunity food table eating like it was his personal bowl. He had a job to do but for 20 minutes, he was under the salsa spell and none of us cared as we spooned past him for our share. She got smart toward the end of our time together and started making double batches. If you’re bringing this to a party, you might want to do the same!

Notes
1/2 Habanero- Hot
1 whole jalapeno, diced- Medium heat
1/2 poblano pepper, diced- mild heat
Ingredients
- 2 cans of No Salt Added Diced Tomatoes & Chilies (or 2 cups fresh diced tomatoes)
- 1 cup chopped red onion
- Half habanero, minced (see notes for other heat levels)
- 1/2 bunch cilantro, chopped
- 1/8-1/4 tsp salt
- 1/2 tsp fresh black pepper
- Juice of half a lime (or whole lime if preferred)
Instructions
- Add all of the ingredients to a bowl and toss together.
- If you don't like chunky salsa, an immersion blender as shown in the video works well to smooth the consistency.

Ooohhh this looks easy enough for me, gonna make some! I loooove Salsa and am always craving it.
It lasts for 7 days or so in the fridge but it’s so good I put it in everything (rice, chips, tacos) so it never makes it that long!
Happy Cinco de Mayo!! We live in a predominently Mexican area and we love it here. The best Mexican food in the Chicago suburbs, for sure.
But (this will be the gringo in me), I love the Pico de Gallo at our local Meijer. I have a jalapeno event that happened in 2002 that I still can’t talk about. Until then, store bought salsa it is.

This looks really good. I am not a huge fan of tomatoes either, but this looks like something I might try. No peppers at all because I like mine really mild.
Roasted red peppers would be a nice addition, no heat but good flavor if you’re interested in subbing!
