Sometimes I get the hankerin’ for apple pie but I don’t feel like going through the trouble to make one. It wouldn’t be good to have a whole apple pie available to me anyway because one bad day and it would be me in a corner eating out of a pan with crust and apple chunks on my face. These are a whole lot safer when the craving hits and are ready in about 10 minutes. Now that I can do!
These are perfect for parties, binge watching snacks, or if you’ve got a craving to satisfy without blowing your calorie budget. We all know that the spices tend to be the real star of the show with apple pie and these have them all. You can top with nuts for an extra crunch, drizzle a little honey on top, a squirt out of the whipped cream can. You name it! Honestly, they taste just as delicious plain and at under 200 calories for two of them, you won’t find any guilt here.

Apple Pie Wonton Cups
Notes
Use all coconut sugar for low glycemic sweetener with similar taste.
Ingredients
- 12 wonton wrappers
- 3 Granny Smith apples, diced
- 1 tbsp dark brown sugar
- 1 tsp coconut sugar (or more brown sugar)
- 3/4 tsp cinnamon or pie spice
- 1 tsp vanilla extract
- 1/4 cup water
Instructions
- Preheat oven to 350 degrees.
- Spray muffin pan with butter cooking spray.
- Place wontons in the individual tins and bake for 5 minutes.
- In a saucepan on medium heat, add sugars, spice, vanilla, and water and stir.
- Add diced apples and toss to coat. Cook for 7-10 minutes until apples are just soft.
- Spoon into wontons and bake an additional 5 minutes or until the corners are browned.
- Top with walnuts, honey, whipped cream or plain.
