One of our favorite restaurants on Kauai was the scene for what we thought was our last dinner on the island. We wanted to go out on a high note, and they are almost always on point. We aren’t drinkers, but I decided to get a Lava Flow cocktail on a whim. The hubby tasted mine and loved it, and we ordered another round for us both. If we knew our airline was going to cancel our flight the next night, keep us there until 3 am, the hotel roosters would start crowing at 4:30 am and we’d have to spend the whole next day fighting with the airlines multiple times, we would’ve ordered one more round. Luckily, you can make these babies at home to welcome summer or when you need a little aloha!
The combo of the banana, pineapple, and coconut is delicious enough on its own but you add that kiss of strawberry puree and a rum punch, and you’re ready for summer! (Or Thursday night, no judgment.) We’re not big alcohol people, so I used 1/2 ounce of rum in mine, but I’d say 1 to 1 1/2 ounces is the right balance. (But I don’t know what kind of week you’ve had so you can go all the way up to 2 ounces if you want full octane.)

Notes
If you prefer, add puree to the glass first and top with coconut mixture.
Ingredients
- 2 oz. fresh strawberries
- Splash of coconut water
- 2 oz. coconut cream from 1 can organic light coconut milk
- 2 oz. pineapple juice
- 1/2 banana
- 1/2-2 oz rum of your choice
- 3-5 ice cubes
- Garnish pineapple cube and strawberry slice on a paper umbrella
Instructions
- Cut strawberries and put in a personal blender and a splash of coconut water. Pulse until it's pureed and set aside. Wash blender.
- Place 1/2 banana, coconut cream, pineapple juice and rum into blender and pulse until well blended.
- Add ice cubes and pulse until frothy.
- Pour into a 10 oz glass, add strawberry pure to the top and garnish.
- Enjoy!
