Ready or not, the holidays are just around the corner. You may be someone who likes to break out of the gates baking all of the things or maybe you prefer to start slow and work your way up. You can ease into the season by making this fun and tasty Iced Gingerbread Popcorn. It is the perfect snack to cuddle up with the fam for the first holiday movie of the season.
The hardest part is waiting for the melts to harden but other than that, easy peasy! You can amp up the spices or customize it how you like. If you love sprinkles like I do, it gives you another reason to raid the holiday kitchen section. Since Thanksgiving is next week, how fun could this be to make with the kiddos when there’s a lull and send them home with bags of it as fun way to kick off the holiday season?

Iced Gingerbread Popcorn
Ingredients
- 3 tsp flavorless oil
- 6 tbsp popcorn kernels
- 3 brown paper bags
- 1/2 cup vanilla candy melts
- 1 tsp-1 tbsp molasses
- 1/8-1/4 tsp ground cloves
- 1/8-1/4 tsp ground ginger
- Holiday sprinkles (two different kinds)
Instructions
- In a small bowl, drizzle about 1 tsp of your preferred oil and 2 tbsp of popcorn kernels. Stir or shake until the kernels are coated.
- Put the kernels inside a brown paper lunch bag making sure the double fold the top to keep it from opening in the microwave.
- Set for 90 seconds but stop when you heard 3 full seconds between pops at the end so it doesn’t burn. Repeat with another batch or two depending on the size of your crowd.
- Pour the popcorn onto a cookie sheet and remove about ¼ of it to a bowl then divide what’s left in half on the sheet.
- Use about ¼ cup white candy melts and melt according to instructions.
- Place the melted candy into a small snack bag and snip the corner for piping. Drizzle the candy melts onto one side of the popcorn coating well. Top with cute little gingerbread sprinkles and allow them to harden.
- Use ¼ cup more candy melts and melt down. Add 1 tbsp of molasses and stir. It may start seizing a little but add some no flavor oil and it will make it smooth again. Add 1/8-1/4 tsp of cloves and stir. Then add 1/8-1/4 tsp of ground ginger and stir.
- Add it to a snack bag and snip the corner for piping. Pipe onto the other side of the popcorn and give it a little toss to coat and top with sprinkles. Then pipe on some more.and allow to cool.
- Use a spatula to gently break up both side of the popcorn and mix both sides together. Then add back in some of the plain popcorn and you’re ready to bag or serve!

It looks like Sugar Shack carries them (https://www.sugarshack.co.uk/catalogsearch/result/?q=candy+melts) I don’t know there are any equivalent except white chocolate chips which can be fickle when heated. I hope that helps!
