The holidays are almost here! Save yourself some work on Christmas morning by putting together this French Toast Casserole. It can be assembled the day before and popped into the oven while you’re opening presents and playing with toys. (Or the boxes depending on how young the kids are.) This will be ready when you are and it’s so light and fluffy!
Top with syrup, fruit, yogurt, powdered sugar, melted cookie butter or anything your little heart desires! A nice, crisp crust on top and pillowy goodness on the inside make this a breakfast you’ll make again long after the holidays are over. All of the taste of French toast without standing around flipping bread while missing out on the fun. Yes, please!

French Toast Casserole
Ingredients
- 1 loaf brioche or challah
- 8 whole eggs
- 2 1/2 cups milk
- 3/4 cup sugar
- 1 tsp cinnamon
- 2 tsp vanilla extract
Crumble Ingredients:
- 1/4 cup all-purpose flour
- 1/4 cup dark brown sugar
- 1/4 cup cookie butter
- 1/2 teaspoon cinnamon or allspice
- 1/8 teaspoon salt
- 1 pinch allspice
- 1/2 stick cold butter, cut into cubes
- 1/4 cup quick cook oats
Instructions
- Butter a 9 x 13-inch baking pan and set aside.
- Cut or tear bread into chunks (or cut into cubes) and evenly distribute in the pan.
- In a medium sized bowl mix together eggs, milk, sugar, and vanilla. Pour evenly over the bread. Cover tightly and put in the fridge for 4-8 hours or overnight.
- In a separate bowl, mix flour, brown sugar, cookie butter, allspice, and salt. Add butter cubes and cut them into the dry mixture until it resembles large crumbs. Store in a bowl in the fridge until ready to bake.
- Preheat oven to 350 F.
- Remove casserole from the fridge and sprinkle crumb mixture on the top.
- Bake for 45 minutes then cover with foil and bake for 15 more minutes.
- Delicious alone or with maple syrup.
