I admit, I’m crazy for scones. Once I made them and saw how easy they were and that they weren’t the dry bricks people made them out to be, I was hooked. These Cranberry White Chip Scones are so festive for the holiday season and would be perfect Christmas morning or to bring as a thank you gift for whomever is hosting the holiday gathering this year. I mean how awesome would it be after having family invade, cause a ruckus and leave in a whirlwind to not have to worry about breakfast the next morning? Pair them with a box of seasonal tea and you’ll be sure to get an invite back to the head of the table.
Make them for yourself or your family on a day when you’ve got nothing going on, let them cool then wrap them individually and put them in a freezer bag for breakfast on the go on hectic days!
Cranberry White Chip Scones
Ingredients
- 2 cups all-purpose flour
- 1/2 cup sugar
- 3 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup cold butter
- 6 tablespoons 2% milk
- 2 eggs, beaten
- 1/2 cup dried cranberries
- 1/4 cup white chocolate chips
- 1/2 teaspoon coarse sugar
Instructions
- In a small bowl, combine the flour, sugar, baking powder and salt.
- Cut in butter until mixture resembles large crumbs.
- In a small bowl, combine milk and 2 tbsp beaten egg; add to flour crumb mixture just until moistened. Stir in cranberries and white chips and gently fold being careful not to over work the dough.
- Turn onto a floured surface; knead gently 6-8 times.
- Pat into an 8 inch circle. Cut into eight wedges. Separate wedges and place on a lined baking sheet. (If you have the time, place in fridge for 20-30 minutes to let the gluten relax for higher scones)
- Brush with remaining egg; sprinkle with coarse sugar.
- Bake at 425° for 12-15 minutes or until golden brown.
