The hubby’s favorite add-in for his oatmeal is Dark Chocolate Dreams peanut butter. (Affiliate link) As I was looking at it one day, I remembered those super easy Fluffernutter cookies and my wheels got turning. “I bet I could make a rocky road version with that peanut butter and even if it doesn’t taste exactly how I envisioned, half the fun is trying, right?”
Well, they didn’t taste exactly how I envisioned.
They were BETTER!
Now, I know they look like, as Ina Garten would call them, “a dog’s breakfast.” But my friends, don’t judge a cookie by their cover because these are the chewiest, chocolatiest, marshmallowiest cookies you can make. NO FLOUR REQUIRED! With 5g of protein per cookie, I’m almost tempted to call them protein cookies, but that might be my justification for having two. You ready to make the easiest batch of cookies ever? The video shows you how to bring it all together and what the recipe should look like in different stages.

Peanut Butter Rocky Road Cookies
Ingredients
- 1 cup Dark Chocolate Dreams Peanut Butter
- 1 cup marshmallow creme aka Fluff
- 1 egg
- 1/2 cup almonds, chopped
- 1/2 cup semi-sweet or dark chocolate chips
Instructions
- Preheat oven to 350 degrees.
- Chop 1/2 cup of almonds into small pieces.
- In a large bowl, add the dark chocolate peanut butter and egg and mix until combined.
- Add in the chocolate chips and almonds and stir until incorporated.
- Add the marshmallow fluff and fold in. You want to see streaks of the marshmallow, not have it combined completely. See video for how it should look.
- Using a cookie scoop, scoop onto a lined cookie sheet and bake for 12-13 minutes.
- Allow to rest on the cookie sheet for 3-5 minutes before transferring to a wire rack to cool.
- Store in air tight container for 5-7 days.
